Chewy Double Chocolate Oreo Chunk Cookies

Here is something chewy, chocolatey and sweet to brighten your day!  Enjoy with a tall glass of almond, soy or rice milk (like I will)! xo

Chewy Double Chocolate Oreo Chunk Cookies

Ingredients


1/2 cup butter, softened

1 cup granulated sugar

1 whole egg

1 teaspoon vanilla

1 cup all purpose flour

1/3 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt
6 whole oreo cookies, chopped roughly
1/2 cup white chocolate chunks

Directions

In the bowl of a stand mixer, whip butter and sugar together until light and fluffy. Stir in egg and vanilla. Scrape sides and mix again.
Pour in all dry ingredients and stir until just combined. Scrape sides and mix again briefly.
Stir in white chocolate chunks and chopped oreos by hand. Refrigerate dough 30 minutes.
Preheat oven to 350.
Line baking sheet with silicone baking mat or parchment paper.
Scoop rounded tablespoons of dough onto prepared pan. Press down lightly to flatten slightly.
Bake 8 minutes or until no longer shiny.
Cool 3 minutes on baking sheet and remove to cooling rack. Serve with lots of milk.

Sisters Gourmet Review!


Happy Weekend Everyone!

If you are in the mood to bake and enjoy delicious and tempting baked treats with your family and friends, Sisters Gourmet has what you are looking for! They sent me two mixes for review: Million Dollar Cookies and Hopscotch Cookies as pictured above. The recipes were very easy to follow, and the mixes certainly created a tasty cookie! I really enjoyed both mixes equally, but I do have a soft side for butterscotch, as it is my favorite type of cookie!

I brought each batch into my school where I student teach on two different days. The second batch I brought in during parent-teacher conferences. Each batch of approximately 24-26 cookies was eaten in less than an hour. Many faculty and staff members approached me in the hallways, asking for the recipe. Instead I provided them with my blog address and the Sisters Gourmet website for the mixes. I remember walking in during my lunch break when I had the Million Dollar cookies out on the table and only three were left. About a minute later, the entire batch was eaten! Everyone was raving about them and telling me how yummy they were!

Holiday Snowball Cookies

Dear Friends,

Below is a great recipe for the holidays, but can be made for any event during the year! It is also very easy to make. Instead of using holiday morsels, consider using butterscotch chips or dark chocolate chips. Personally, I like to mix it up!


Ingredients

Directions


  1. PREHEAT oven to 375°F.
  2. BEAT butter, sugar, vanilla extract and salt in large mixer bowl until creamy.
  3. Gradually beat in flour; stir in Shapes & Morsels and nuts.
  4. Shape level tablespoons of dough into 1 1/4-inch balls. Place on ungreased baking sheets.
  5. BAKE for 10 to 12 minutes or until cookies are set and lightly browned. Remove from oven. Sift powdered sugar over hot cookies on baking sheets. Cool on baking sheets for 10 minutes; remove to wire racks to cool completely. Sprinkle with additional powdered sugar, if desired. Store in airtight containers.

Girl Scout Cookies 2012

Dear Friends,

I am so excited that once again is the new season of selling Girl Scout Cookies. I remember many years ago in the late 90's when I was a girl scout; one of my favorite opportunities besides taking trips and camping was selling Girl Scout Cookies. Us girl scouts worked very hard to sell as many cookies as we could to help support our troops.


I remember my family and I would buy about fifteen boxes (no joke!) but we would keep some and give some to the local food bank and we would send the boxes to family members who lived nearby.

I love checking each year to see the new types of cookies that are sold. This year seems to have a great selection! It is too bad that I live in an area where Girl Scouts do not come directly to your door and I never see any booths setup outside the local supermarket.

This year the line up includes the Samoas, or Caramel deLites, Do-si-dos or Peanut Butter Sandwich, Tagalongs or Peanut Butter Patties, Thank You Berry Much, Lemonades, Savannah Smiles, Thanks-A-Lot, Trefoils or Shortbread, Shout Outs! and Thin Mints.

It is so funny that each person in my family loves a different cookie. For example, my brother's favorite is the Do-si-dos, my mom's favorite is the Thin Mints, my grandpa's favorite is the Trefoils, my husband's favorite is the Samoas, my grandma's favorite is the Savannah Smiles and my favorite is the Tagalongs. I would love to try the Lemonades, as I love cookies with lemon cream filling. I still miss my old favorite cookie, the Lemon Drop cookie which I still have not been able to find a replica. Perhaps they would consider bringing back "retired" cookie flavors.

Oreo Stuffed Chocolate Chip Cookies

I had to share this recipe! I cannot wait to make this with my family over the holidays this fall!



Makes 24 gigantic cookies
Prep: 25 minutes
Cook: 13 minutes
 
Ingredients
 
• 1 cup (2 sticks) softened butter
• 3/4 cup packed light brown sugar
• 1 cup granulated sugar
• 2 large eggs
• 1 tablespoon vanilla extract
• 3 1/2 cups flour
• 1 teaspoon salt
• 1 teaspoon baking soda
• 2 cups semi-sweet chocolate chips
• 1 package Double Stuff (or any type of) Oreo cookies
 
 

Directions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream butter, brown sugar, and granulated sugar together with a mixer until well combined. Beat in eggs and vanilla.
  3. In medium bowl mix the flour, salt, and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined.
  4. With a cookie scoop, form balls with the dough.
  5. Place one ball on top of an Oreo cookie, and another ball on the bottom. Seal edges together by pressing and cupping in hand until Oreo cookie is fully enclosed with dough.
  6. Place onto parchment or silpat lined baking sheets and bake cookies for approximately 13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
