My 2010 Engagement Photos Vanessa and Kris

Dear Friends,

I wanted to share my engagement photos with you from 2010 (even though my husband and I got married in the summer of 2011)! We had our photos taken in Disney World at the Yacht and Beach Club.

Disney World Food Purchases

Dear Friends,

Even though there are so many wonderful food items to purchase in Disney World, I would like to share a few of my favorites from a recent trip.

Below are three snacks I purchased from the Japanese pavilion. One of my favorite snacks is Pocky, so I always buy a unique flavor of Pocky whenever I visit. I also like to try something new! The chocolate cheesecake bites were very yummy and not too sweet. These two flavors of Pocky were definitely winners! Great with tea or coffee in the evening or for kids to bring to school as a dessert. Each container contains the Pocky wrapped in small packages.

At the Magic Kingdom, you cannot skip out on purchasing some containers of the Alice in Wonderland tea. A great accompaniment for the tea are the Walker's Disney shortbread rounds. I love both the chocolate and the plain. It just depends upon my mood which one I prefer when  :-).

Happy Snacking!

Acrobatic Dancers at Disney's World Showcase

When I went to Disney World this past March, I took visited the Chinese Pavilion in EPCOT and witnessed the acrobats, young performers from China. I was very impressed with their gymnastics and choreography. It reminded me of when I did gymnastics and dancing when I was in elementary school. I did tap, jazz, ballet and gymnastics, beginning in first grade. Yet I never could do anything that advanced as what these performers are able to do. I wish I were that flexible! Watch the video below of one of the performers juggling a large vase with her feet. She even juggled a table! I was stunned and couldn't take my eyes away from the show. Enjoy!

Bavarian Cheesecake

This recipe is from Biergarten, the restaurant at the Germany pavilion, at Walt Disney World.  It was my favorite dessert.  It was a soft, delicate cake that is addicting after just one bite.  You will definitely be going back for seconds!

Ingredients
6 ounces Cream Cheese
6 ounces Baker's Cheese
2 Egg Yolks
4 ounces Granulated Sugar
8 ounces Sour Cream
1 ounce Lemon Juice
12 ounces Heavy Cream
1/2 ounce Gelatin
2 ounces Water
Vanilla Sponge Cake

VANILLA SPONGE CAKE

Ingredients
3/4 cup Sugar (granulated)
4 Egg yolks
1 teaspoon. Vanilla Extract
3/4 cup Flour (all-purpose)
3/4 teaspoon Baking Powder
1/2 teaspoon Salt
4 Egg Whites

Directions
1. Preheat an oven to 375 degrees F.

2. Sift together the flour, baking powder, and salt.

3. In a mixer, add the egg yolks and sugar beat until light and creamy. Add the vanilla extract.

4. Gradually add the flour mixture to the egg mixture. Beat until smooth.

5. Whip the egg whites until stiff, but not dry. Gently fold this into the cake batter.

6. Place into two separate greased and lined 8-inch round cake pans. Bake for approximately 10-12 minutes.

Assembling Cake
1. Whip heavy cream until soft peaks. Set aside.

2. Mix together in a mixing bowl the cream cheese, baker's cheese, egg yolks, and granulated sugar until smooth. Then add the sour cream and mix until smooth.

3. Gently add the whipped mixture to the cheese mixture being careful not to over whip.

4. Dissolve the gelatin in the water over a double boiler until the mixture is clear. Be careful not to whip the gelatin so it does not get air bubbles in it.

5. Add the gelatin mixture into the cheese mixture and fold quickly. When adding the gelatin mixture to the cheese mixture set the mixer on medium speed, and add it from the edge of the bowl, being careful not to get the gelatin on the whip or the side of the bowl so as to prevent lumping.

6. Using a springform pan, place one of the vanilla sponge cakes smooth side down. Immediately pour the cheese mixture on the cake, and smooth out surface. Then place the other cake on top with the smooth side out. Let set overnight.

7. Remove the cake from the springform pan. Sprinkle the top of the cake with powdered sugar. This cake can be served with any of your favorite fresh fruit sauce(s).

Spring Break- Disney World

I recently went to Walt Disney World in Orando, FL with my grandmother over spring break.  When we visit we usually stay at either the Yacht or Beach Club.  During this visit we stayed at the Grand Floridian, and it certainly was Grand!  Unfortunately, the weather outside was mild in the low 60's, hardly beach weather...no tan :(  We stayed on the conceirge floor and enjoyed various delectables, including unlimited:
  • Chocolate Covered Strawberries & assorted fruit
  • Vegetable Crudites
  • Hummus, mini crab cakes & stuffed scallops
  • Petit Fours
  • Cupcakes & Brownies
  • Hot, Cold & Alcoholic Beverages
  • Cheese & Crackers
If you stay at the Grand Floridian, I highly recommend the conceirge floor!  Do visit soon!

My Disney itinerary is as follows, including recommended restaurants:
  • Dinner at Raglan Road (Downtown Disney)- The BEST coclannon soup and goat cheese salad
  • La Nouba, Cirque Du Soleil (A DAZZLING PERFORMANCE!)
  • Epcot- Japanese Pavilion for Pocky, gifts, books, Ramune (Japanese soda), & sushi plates
  • England for gifts & tea
  • Canada for Music Stage Performance
  • Germany for Lunch, the best Bavarian Cheesecake
  • Mexico & Norway for boatride
  • The Land & Seas adventures & Tours
  • Chinese pavilion for gifts and acrobat show!
  • Magic Kingdom- Splash Mountain, rode the train around the park, Minnie's bake shop for goodies: decorated rice crispy treats & giant cookie, Liberty Square
